Our Story
In 2010, Asun and Mariano left Alicante with their recipes, their passion, and one certainty: the Costa del Sol needed real rice. Authentic rice from Elche. Rice cooked slowly, with fresh ingredients, and with the respect that one of the most complex dishes in Mediterranean cuisine deserves.
Asun had spent her whole life perfecting this knowledge. Traditional Elche cuisine is not just a technique—it’s an identity, a way of understanding time and gathering around the table. This expertise was the most valuable luggage she brought with her when Torre del Mar welcomed them, accompanied by the whisper of the Mediterranean and that evening light found only in the Axarquía.
From a small, characterful space and five years of honest work, La Dama de Elche was born: a seaside restaurant on the Paseo Marítimo, with seating for 130 guests and a reputation built plate by plate.

While Asun and Mariano were shaping the project, their daughter Alba was training at La Cónsula, the hospitality school in Churriana. Years of rigorous learning, specializing in service—but the love for cooking, inherited from childhood, ultimately won.
Alba decided to join the kitchen with the same passion her mother had instilled in her about what it means to cook well. Today, they work side by side, guided by traditional recipes and the enthusiasm of those who cook from genuine vocation.
Every rice dish that leaves our kitchen carries years of Elche tradition, carefully selected fresh ingredients, and the perfect cooking point that cannot be improvised—it is learned, practiced, and perfected. This is what Asun and Alba put into every paella, every soupy rice, and every fideuà.
